I have a really simple recipe today that’s full of flavor and so easy too! Garlic Roasted Endives

I just love these…..and I usually eat the whole tray myself.
It’s true. ;)

Now let me show you how truly easy these tasty little garlic roasted endives are.

They start out like this….

I rinse well and cut those ends off.

Then I slice them longways….

…and add all that good stuff you see there.

It’s a mixture of Parmesan cheese, chopped walnuts–> (secret ingredient that really makes them tasty!), garlic, seasonings and olive oil.
If you don’t do dairy, you can use nutritional yeast, like this one that I use, in place of the Parmesan.

Bake for about 15 minutes and then broil for about 5 to get them crispy on top.

That’s it!

Garlic Roasted Endives


Ingredients

Scale
  • 3 endives (sliced into quarters)
  • 3 T shredded Parmesan cheese
  • 2 cloves garlic (minced)
  • 2 T chopped walnuts (chopped small)
  • Salt (to taste)
  • Cayenne pepper (to taste (I like a bit of spice with everything, if you don’t, omit))

Instructions

  1. Lay the sliced endives on a baking pan or stone .
  2. Drizzle with olive oil.
  3. Sprinkle with garlic, Parmesan Cheese, walnuts and seasonings.
  4. Bake at 350 for 10-15 minutes until tender.
  5. Broil for approximately 5 minutes to crisp the top layer. (keep an eye on them)

Notes

If you don’t eat dairy, you can replace the Parmesan cheese with nutritional yeast.

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes

    1. Oh they are good! My husband doesn’t like them though so everyone may not. They do have a slight bitter taste but I like it! :)
      These are so good with the mixture of all that roasted goodness (walnuts, Parmesan cheese and garlic..oh my!)

  3. These were so good!

    I am off dairy right now so I left out the Parmesan, but they were still delicious – I didn’t miss it at all.

    I tossed them in a salad of steak, quinoa, apples, and garlic oil. I would recommend it. :)

    I baked them at 350 degrees for the recommended time, but I didn’t see a cooking temperature. What temp do you recommend? (I apologize if I simply overlooked it.)

    1. Yay, so glad you liked them Amanda! And yes, I’m so sorry, 350 is correct. I have updated the post to include that and also added in a non-dairy replacement for the cheese that I like to use as well. :) How you prepared yours sounds wonderful, by the way! Will have to try it! :) xo

  4. do you just slice them ponce longways, like in the directions? Or quarter them, like you have listed in ingredients?
