I’m seriously not kidding.
They are probably THE BEST SUGAR COOKIE… ever.
The secret for the wonderful flavor??? Dark Brown Sugar.
They are chewy and really crisp right out of the oven then crispy, crunchy once cooled.

Need a gluten free version? I’ve got one for you, here! And they are just as amazing as these. You wouldn’t even know they were gluten free if I didn’t tell you. ;)

I’ve been making these since my kids were little. (and they aren’t anymore :( )

As a matter of fact, I haven’t made these in years until I decided to recently make to share here with you all.
I had forgotten (good thing! ;) ) how good they were.
And my kids loved them so much (best raw cookie dough ever too) that I used to make the dough eggless for them to eat raw.

Anyway, onto this fabulous (and did I mention easy?) recipe.
Easy recipes are a must for me.

OH…and these are VERY versatile too….
~You can add Almond extract (or other, such as Lemon) instead of Vanilla for a different flavor.
~You can roll them in Cinnamon sugar and bake.
~ You can use all white sugar for a totally different flavor.

I mentioned this was an easy recipe, and it is.
You’ll need two bowls and a mixer or hand mixer.
Beat the butter, sugars, egg and vanilla in one and mix the dry in the other. (full directions below)
Then gradually add the dry to the creamed mixture.

Roll into balls, roll in sugar and bake! (keep the dough chilled in the refrigerator for best results)
I usually roll them all into balls and place on a big platter in the fridge.
Take them out as you need to bake them. This works great because it creates the perfect cookie, plus it saves time!
Win, win. :)

IMPORTANT NOTE: Try to use a baking stone to cook these cracked brown sugar cookies, for best results.
They tend to spread a bit on a metal pan. Keeping the dough chilled helps on both pans, however.

Cracked Brown Sugar Cookies


Ingredients

Units Scale
  • 1 cup butter
  • 1 cup sugar
  • 1/2 cup DARK BROWN SUGAR (packed)
  • 1 large egg
  • 1 tsp Vanilla
  • 2 cups all purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cream of tarter
  • sugar

Instructions

  1. Beat butter until light and fluffy.
  2. Add the sugars. Beat in the egg and vanilla.
  3. Combine the flour and other dry ingredients in a separate bowl.
  4. Gradually mix the dry ingredients in with the creamed mixture.
  5. Roll into 1 inch balls, roll in sugar and bake about 2 inches apart.
  6. (Roll all of the dough into balls and place in the fridge. This produces the perfect cookie plus saves time.)
  7. Bake @350 for 10-12 minutes.

Notes

These are so versatile.
-You can use all white sugar for a different flavor. (more traditional sugar cookie)
-You can roll the cookies in cinnamon sugar at the end and bake.
-You can use other flavorings besides vanilla for a different flavor.
Try to use a baking stone to cook these, if you have one. (they ten to spread more on a metal pan)
Keep the dough chilled to prevent spread on either type of pan.

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes

  1. Wow! These sound amazing. Have you ever rolled them in brown sugar before baking? I wonder how they would taste rolled in coconut sugar or using that in the recipe with either the white or brown sugar. I’ll try them and let you know

    1. Thanks, they are so good! ;) (too good!! lol) I have not rolled them in brown sugar since I just want a light hint on the outside. (and brown sugar is a bit more dense) BUT I’d bet they’d be good that way too. I also love and use coconut sugar too. I am actually going to make these gluten free for my nephew for the holidays and may have to try them with coconut sugar too.
      That way I can try out both. I’m hoping they turn out right gluten free. May have to tweak a bit.
      I will edit the post here as to how they turn out and different options. Would love to hear how yours do if you change anything up!
      Oh, and using white sugar would give you a more traditional sugar cookie.

  3. Made these 4 times within 2 weeks. They were devoured very quickly. The last batch I added dried cranberries and chopped pecans. Oh, my!

  4. Thank you for the recipe for these terrific, addictive cookies. I love brown sugar, and I love crunchy cookies, so these really fill the bill. Plus, I like your tip for getting all the cookies ready to bake and chilling them all at one time. I will definitely do that with other cookies, like my crinkly molasses cookies and snickerdoodles. Saves returning the dough to the fridge in between batches.

  5. These are amazing especially for a family that isn’t crazy about any cookies. I ended up making 2 batches in a week! I have added dried cranberries and chopped pecans! Wow! Also considering we prefer crispy cookies I did not refrigerate the dough so they spread nicely and create great crispy cookies!

    1. Was your baking stone hot? They could spread if so. Also, to prevent that, try rolling them into balls and chilling in fridge first. I’m sad you gave it a one star rating for that. I’ve made these a million times and that does not happen to me. The recipe is amazing! Hope you will give it another try!
