Ingredients

Units Scale
  • 1 lb sweet frozen corn, thawed slightly
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 2 T jalapenos, chopped
  • 1/2 (2 oz) 4 oz can diced green chilis
  • 1 T agave or sweetener of your choice
  • 1/2 T olive oil
  • 1 handful cilantro, chopped (large handful)
  • 1/2 tsp onion powder
  • 1/2 lime (juice from 1/2 lime)
  • 1/4 tsp chili lime seasoning or similar (Trader Joes)
  • 1/8 tsp salt, or to taste

Instructions

  1. Chop as directed and mix all ingredients in a large bowl.
    Add salt, as desired.
    Let sit in the refrigerator for an hour or two (or even overnight) to let the flavors mix before serving.
    Serve with chips, over meat or fish, or with tacos, etc.
