Colorful Corn Salsa (perfect for many dishes!)
Colorful corn salsa is the perfect addition to many dishes and it’s great alone with chips, too! Plus, with it’s colorful nature, is also appealing to the eye.

I’ll be sharing a couple of that can be stand alone staples (this colorful corn salsa & a basic red tomato salsa). Then finishing up with the main dish that ties them all up together. You’ll just have to stay tuned. ;)

The corn salsa is sooo simple to throw together.
Just chop (I always use this awesome time saver when chopping) and mix!
Can’t get much easier than that.
The addition of green and red peppers really snazz up the yellow corn.
Lots of ways you can eat this…..layered over grilled chicken, or salmon, inside tacos or by itself with chips.
It’s got so much flavor, it will be wonderful no matter what you add it to.

Ingredients
- 1 lb sweet frozen corn, thawed slightly
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 2 T jalapenos, chopped
- 1/2 (2 oz) 4 oz can diced green chilis
- 1 T agave or sweetener of your choice
- 1/2 T olive oil
- 1 handful cilantro, chopped (large handful)
- 1/2 tsp onion powder
- 1/2 lime (juice from 1/2 lime)
- 1/4 tsp chili lime seasoning or similar (Trader Joes)
- 1/8 tsp salt, or to taste
Instructions
- Chop as directed and mix all ingredients in a large bowl.
Add salt, as desired.
Let sit in the refrigerator for an hour or two (or even overnight) to let the flavors mix before serving.
Serve with chips, over meat or fish, or with tacos, etc.
