Beets, Carrots & Cilantro Potato Salad


  • 6 medium sized red potatoes (cut into 11/2 inch pieces)
  • 2 cups of baby carrots or 3 large carrots cut
  • 3 small or 2 large beets (cooked and cut into 1 inch squares)
  • 11/2 large stalks of celery (chopped)
  • 1/4 cup sweet onion (minced)
  • 1/41/2 chopped cilantro
  • 1 to 1-1/2 cups mayonnaise
  • Salt and Pepper (to taste)


  1. Wash, chop and boil the potatoes and carrots. (and beets if you can’t find pre-cooked beets)
  2. Once medium tender, drain and cool. (to keep from being mushy once stirred)
  3. Chop celery and cilantro.
  4. Mince onions.
  5. Add all ingredients to a large bowl and stir.
  6. Refrigerate and serve.
  7. Garnish with chopped cilantro, if desired.
