Ingredients

- 6 medium sized red potatoes (cut into 1–1/2 inch pieces)
- 2 cups of baby carrots or 3 large carrots cut
- 3 small or 2 large beets (cooked and cut into 1 inch squares)
- 1–1/2 large stalks of celery (chopped)
- 1/4 cup sweet onion (minced)
- 1/4 –1/2 chopped cilantro
- 1 to 1-1/2 cups mayonnaise
- Salt and Pepper (to taste)
Instructions
- Wash, chop and boil the potatoes and carrots. (and beets if you can’t find pre-cooked beets)
- Once medium tender, drain and cool. (to keep from being mushy once stirred)
- Chop celery and cilantro.
- Mince onions.
- Add all ingredients to a large bowl and stir.
- Refrigerate and serve.
- Garnish with chopped cilantro, if desired.
