Gluten Free Banana Nut Bread with Chocolate Chips


Ingredients

  • 3 T butter (softened)
  • 1 T greek yogurt
  • 1/2 cup honey (I used 1/4 cup honey and 1/4 cup xylitol)
  • 2 eggs (beaten)
  • 12 cups banana (mashed)
  • 13/4 cups Pamela’s Baking Mix
  • 1/23/4 cup chocolate chips (optional, I use semi-sweet)
  • 1/2 cup walnuts (optional)
  • 1/4 t salt
  • 1/4 t baking powder
  • 1 T vanilla

Instructions

  1. Mix together butter, mashed bananas yogurt and vanilla.
  2. Add the eggs, chocolate chips and walnuts.
  3. Gently fold in the salt, baking powder and flour mix.
  4. Pour into a loaf pan and bake at 350 for approx. 45 minutes, or until golden and cooked through.

Notes

You can omit chocolate chips and nuts, if desired.
