- 1 pkg Cauliflower Gnocchi (Trader Joe's) or traditional, if you prefer
- 2 cans diced tomatoes (plain or Italian seasoning) (see post for link)
- 1/4 cup coconut milk (full fat) (see post for link)
- 1/4 cup diced onions
- 2 large cloves of garlic, diced
- 1 T coconut sugar (or brown or regular)
- 1 tsp Italian seasoning
- 1 tsp Basil, ground dried (or fresh)
- 1/2 tsp Italian Herbs Grinder Seasoning (see post for link)
- dash cayenne pepper, to taste
- salt and pepper, to taste
Instructions
- Start out by sauteing the frozen gnocchi in a fry pan with a little bit of olive oil. Lightly brown it and set it aside.
- Then cook the garlic and onion in a dash of olive oil to soften them just a bit.
- Then add the 2 cans of diced tomatoes and seasonings and sugar. Simmer over medium low heat until the liquid is reduced
- Add the gnocchi and coconut milk. Heat through.
- Drizzle with olive oil and serve.
