Oh my gosh, this dish.
It is one of the best I’ve created. Well, okay, I know, probably not but I am in LOVE.
It is so rich and flavorful and the gluten free gnocchi is right on.

I should talk about that.

The gluten free gnocchi is not of my own making. I found it at Trader Joe’s.

It’s actually made from cauliflower….and it … is … so … good.
Well, I love it anyway! ;)

It is a little on the sticky side but I’m totally okay with that because that just means all that luscious sauce sticks so wonderfully to it.
Right?? Yes.

Bits of garlic, just so good.

Start out by sauteing the frozen gnocchi in a fry pan with a little bit of olive oil. Lightly brown it and set it aside.
If you want to skip this step, you can. Instead, add the frozen gnocchi at the same time as you add the diced tomatoes.

Then cook the garlic and onion in a dash of olive oil to soften them just a bit in another pan.

Add the 2 cans of diced tomatoes and seasonings and sugar. Simmer over medium low heat until the liquid is reduced.

Stir in the gluten free gnocchi if you haven’t already.

Lastly, add the coconut milk and stir well. Heat through.
(you can also use regular dairy cream if you are not dairy free or lactose intolerant)

Drizzle with olive oil and serve.

Gluten Free Gnocchi with Dairy Free Pomodoro Sauce

Ingredients

Units Scale
  • 1 pkg Cauliflower Gnocchi (Trader Joe's) or traditional, if you prefer
  • 2 cans diced tomatoes (plain or Italian seasoning) (see post for link)
  • 1/4 cup coconut milk (full fat) (see post for link)
  • 1/4 cup diced onions
  • 2 large cloves of garlic, diced
  • 1 T coconut sugar (or brown or regular)
  • 1 tsp Italian seasoning
  • 1 tsp Basil, ground dried (or fresh)
  • 1/2 tsp Italian Herbs Grinder Seasoning (see post for link)
  • dash cayenne pepper, to taste
  • salt and pepper, to taste

Instructions

  1. Start out by sauteing the frozen gnocchi in a fry pan with a little bit of olive oil. Lightly brown it and set it aside.
  2. Then cook the garlic and onion in a dash of olive oil to soften them just a bit.
  3. Then add the 2 cans of diced tomatoes and seasonings and sugar. Simmer over medium low heat until the liquid is reduced
  4. Add the gnocchi and coconut milk. Heat through.
  5. Drizzle with olive oil and serve.
