Maple Bacon Chocolate Chip Cookies

Ingredients

  • 21/4 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup brown sugar (packed)
  • 1/2 cup white sugar
  • 2 sticks butter, softened but not melted
  • 2 eggs
  • 1 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 tsp maple extract
  • 1 cup mini chocolate chips (or more, as desired)
  • 1/21 cup chopped cooked bacon (as much as desired)

Instructions

  1. Chop bacon into very small pieces. Drop into hot oil and cook until extra crisp. Drain and remove as much of the oil as you can. Set aside to cool.
  2. Cream the butter and sugars together.
  3. Add the eggs, maple syrup and flavorings to the creamed sugar/butter mixture. Mix well.
  4. In a separate bowl, mix the dry ingredients.
  5. Add the dry ingredients to the creamed sugar/butter mixture.  Mix well.
  6. Add the chocolate chips and bacon to the dough and incorporate by hand.
  7. Roll into small balls and bake at 375 for 7-10 minutes. (Shorter for softer cookies, longer for crunchy cookies)
  8. Cool and drizzle, if desired, with a simple icing consisting of powered sugar, milk and maple syrup extract. (or vanilla, whichever you prefer)
