Who doesn’t love a good scone??

Well, I suppose there are some who don‘t. But who are you people?? haha
I love scones. Love them.

But I get that they are not everyone’s thing. For those that do love them, I’ve got a super quick and easy (and delicious) recipe for you today.

Today’s recipe is brought to you by my daughter who is a fabulous cook and is always experimenting in the kitchen. She’s going to help me out around here a bit since I have my hands full over on our “Home/DIY/Decor” blog and I’m so thrilled to have her! I’ll be sharing recipes from her and I and am hopeful we can make this a more regular thing around here. I love cooking (and baking) but sadly I don’t have as much time as I used to.

And by the way, who also doesn’t also love simple?? Most of the recipes I post around here are just that. I mean who has time to spend hours in the kitchen cooking? Well, these days a lot of us do but mostly, no. So the recipes I create and make all the time are e a s y. Because I like easy, quick, simple and delicious.

Here’s what you are doing to need to make this scone recipe…

Pretty basic, right?

Yep!

Let’s make some simple scones.

Preheat oven to 375.

Mix all of the dry ingredients together and then either grate the butter into the dry mix or put everything in the food processor, if you have one.  Be sure to keep it from clumping. Mix until all incorporated.
It should still have a dry texture when done.

Next, mix the cream, egg, and milk. (beat the eggs separately before adding to the milk and save back about 1-2 tbsp of the eggs to brush the tops of the scones before baking)

Make a well in the dry mix and pour the wet mix in and mix thoroughly.

Roll out the dough on a floured area to about 3/4 of an inch thick or thicker if you like thicker scones.

You can use any type of cutter you want, and then place the scones on the baking sheet.

If you don’t have a biscuit cutter, you can use a floured glass to cut circles.

Or you can simply cut lines and make them into squares.

Brush the leftover egg wash on the tops and bake for about 20-25 min at 375.

Cook until lightly golden or until desired done-ness. I like mine a little less golden (softer).

Top with jam, marmalade, butter, cream or whatever you like or nothing at all.

Ingredients

Units Scale
  • 4 cups flour
  • 1/4 cup sugar (plus 1 Tbsp, as desired for sweetness)
  • 2 tsp baking powder
  • 11/4 tsp salt
  • 1/8 tsp cream of tarter
  • 1/2 cup unsalted butter (cold)
  • 2 lg eggs
  • 3/4 cup whole milk
  • 1/2 cup cream (whipping cream or half and half)

Instructions

  1. Mix all of the dry ingredients together and then either grate the butter in the dry mix or put everything in the food processor, if available. (it should have a dry, crumbly texture)
  2. Mix the cream, egg, and milk. (beat the eggs separately before adding to the milk and save back about 1-2 tbsp to brush the tops of the scones before baking)
  3. Make a well in the dry mix and pour the wet mix in and mix thoroughly.
  4. Roll out the dough on a floured area to about 3/4 of an inch thick or thicker if you like thicker scones. You can use a biscuit cutter, cookie cutter or even a floured glass to cut the scones.
  5. Brush the 1-2 tbsp beaten egg wash on the tops and bake for approx 20-25 min at 375 until slightly golden (or as desired done-ness).
  6. Serve with jam, marmalade, butter and cream, as desired.
